Shrimp
and Corn Salad

Newfoundland Coldwater Shrimp, Canada
Ingredients:
1 tspn. Lime Juice
1 tspn. Coriander
1 1/2 tspn. Extra Virgin Olive Oil
4 tbls. Mayonnaise
1 cup Shrimp
TT Sea Salt and Fresh Ground Pepper
1/2 cup Fresh Corn (cut off the cob)
1/2 cup Green Pepper
1 Small Japapeno Pepper (chopped fine)
1 Large Shallot (finely diced)
1 tsp Fresh Cilantro (chopped)
1/2 cup Tomatoes (chopped)
Procedure:
In a small bowl. blend lime juice. coriander, olive oil
and mayonnaise. Blend. Add salt and pepper to taste. Toss
with shrimp, cilantro, shallot, green pepper, corn, jalapeno
and tomatoes. Serve on great breads with lettuce of your
choice.
